i live 10 minutes away from an anthropologie store.

this is troublesome.

it’s hard to explain to you how one store encompasses everything pretty… but it is just reality.

that is the short version of how i ended up with these. i know i know.

naturally, i had to made a salad in order to put these beauties to use.

 and let me tell you, this is good. with or without perfectly minted servers.

so good that you’ll probably eat a whole bowl of it without looking up. chow time.

santa fe salad

1 bag lettuce

2 green onions, chopped small

1 can whole kernel corn

1 can black beans, drained + rinsed

3/4 cup salsa

1/2 cup ranch dressing

1/2 cup shredded cheese, i used a mexican blend

tortilla chips for topping

1 lime, quartered

2 chicken breasts

1/2 tsp onion power

1/2 tsp cumin

1/2 tsp paprika

1/2 tsp oregano

salt + pepper

brush some olive oil on the chicken. mix the onion powder, cumin, paprika, oregano, salt + pep & rub over chicken.  pan fry or grill to crispy perfection.

meanwhile, drain and rinse the black beans & corn in a colander. toss together the lettuce, green onions, beans, corn, & cheese.

see what i did there?  oh yeah, they look magnificent.

stir together the salsa + ranch, set aside.

once the chicken is done you can either chop it up and toss it with the salad or if you’re feeling fancy you can set it on top.  add some dressing, a squirt of lime and crumbled tortilla chips for some crunch. easy + delish!
